Given the array of ingredients and flavors on my plate, this is difficult to describe in a few words. So here’s a smattering of thoughts. The tofu was marinated slightly, and I caught a hint of ginger. The seitan was substantial and hearty. The galette was crispy on the outside, soft on the inside, and my favorite part of the meal.
