Love this #sushiroll and I get it nearly every time I come here! I appreciate that Blue Sushi Sake Grill has a huge vegan selection and it's not just basic veggie rolls, they really put in some effort to make tasty, beautiful, and unique rolls. This prince roll is 8 pieces and contains #eggplant #tempura, #avocado, and #sweetsoysauce. It's more simple than some of their other rolls, but the flavors work well together and I love the creaminess of the avocado next to the tempura.
I'm so glad there's a Blue Sushi here in Denver (and they're a chain so there are more locations in other states), because I used to love going here when I lived in Chicago!!
