This was so enlightening! This brand uses regenerative farming techniques which is better for the planet in multiple ways.
It performs just like regular sugar to me and has a slight golden hue. I've baked with it and made a simple syrup, and it behaved nicely in both.
It of course is going to cost more than standard cane sugar, but I'm trying to make more #smallchanges where I can.
