Carrot Tartare al Owamni by The Sioux Chef — Recensione di Iszy (8 dic 2024)

This carrot tartare was a really great appetizer. It's topped with pieces of berry leather, sumac, and maple walnuts and served with corn chips. Owamni is a decolonized restaurant, so it focuses on dishes made from plants and animals that can be found in the Americas. Carrots as we know them most likely originated in western Asia, but there are American wild carrots. I'm not sure this dish really uses these wild carrots, but I guess it can allude to them.

This starter is a bit sweet, but really enjoyable. The carrot flavor comes through and has that nice shredded carrot texture. The berry leather added a nice flavor that paired well with the saltiness of the chips.
