三杯菇 ‘three cup mushroom’, a plant-based take on 三杯鸡 ‘three cup chicken’ - a classic Taiwanese dish with a sauce typically consisting of equal parts soy sauce, sesame oil, and Shaoxing rice wine. 🍗🍄 Being an alcohol-free eatery, I believe the rice wine was replaced with fruit juice and soup stock. In lieu of mock meat, there was a mix of 4 different types of mushrooms - king oyster, shiitake, shimeji, and lion’s mane~ Great sweet-savoury taste and chewy mouthfeel!
