I love everything about Moksa. So here it is again, another fantastic dish we made together with Chef Made. Everything was locally sourced, raw, and so effing delicious. Chef Made is truly a wizard. How does he do it, banger after banger? Throughout the entire cooking class, he doesn’t actually let a single ingredient go to waste. He kept the banana peels to dehydrate later on so he can pan fry it into a different snack, mango feels go into the compost, etc. Just incredible! I feel truly lucky and privileged to be able to just hop on a 1.5 hr plane ride when life gets too hard, then be healed at this place.
