What a refreshing appetizer! Thanh Luong does have outdoor seating, so this would be perfect if you're sitting out there on a hot day. I really loved the shredded tofu. It gives this appetizer more substance and a really nice slightly crunchy texture. This also has vermicelli noodles, lettuce, and herbs. It's served with a lovely vegan fish sauce with a little chili oil. This was such a nice light starter. It's like a handheld salad to get your appetite going!
