Carrot cake for #breakfast, anyone?
I’ve used this #organic #pancakes and #waffles mix in the past, simply prepared as written with water and vegetable oil, and that was already good, but I always knew it was capable of more. On its own, it’s already mildly sweet (it also has more salt than I would expect?) and crisps up nicely in my waffle iron. I decided to adapt this vegan carrot cake waffle recipe from Garlic Head (https://garlic-head.com/carrot-cake-waffles/) to work with the mix I already had in my pantry. #veganrecipes I ended up doubling the waffle recipe on the back of the bag and adding in a few more wholesome ingredients for an incredibly delicious breakfast.
Here’s what I used:
- 1 1/2 cup Birch Benders mix
- 1 cup water
- 2 Tbsp vegetable oil
- 2 large carrots, coarsely grated
- Handful of sultanas
- Handful of walnuts, coarsely chopped
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Combine everything together in a large bowl, then spoon out the batter and cook according to your waffle iron. I like mine extra-crispy, so I left them in for a while (carrots impart extra moisture.) Yield: about 4 large waffles. This is an easy way to improve on an already straightforward, convenient, and tasty product — very much recommended. #lazyvegan The one-pound bag of mix is about $6, but I got it for $3 at Safeway by combining coupons.
