You can't really go wrong with black beans and rice! This dish also has quinoa! Like the mac and cheese, you can add more stuff to this, but it's nice on its own. The black beans have a good flavor and the grains provide a nice base. I like that they have quinoa in addition to the rice. That gives it just a bit of extra protein and flavor. This is a nice side or it can be a good light meal while hanging out on the beach!
