Housemade seitan bacon and slices of housemade boiled egg, tucked between a dense and chewy Brooklyn Boy Bagel that was slathered with sweet chipotle mayonnaise and barbecue sauce. I'm personally not a fan of seitan mock meats, but the 'bacon' did have a smokiness to it, and I definitely appreciated their effort in making their own meat substitutes! The housemade boiled egg was made using almond milk, quinoa flakes, as well as vegan gelatin replacement (I'm guessing algae-derived agar?). The texture of the white in particular was quite convincing as it was firm yet not rubbery, and I could taste a slight "egginess" from the nutritional yeast and black salt.
