This was a really yummy thing to snack on while waiting for dinner to be ready. Olives just feels so right in the summer, especially paired with a nice baguette. When I saw "olive bruschetta", I thought, you mean tapenade?! I guess tapenade would be more finely blended into a spread, while this still maintains the bruschetta texture with large chunks, making it more of a topping rather than a spread. I enjoyed the addition of the red pepper strips. I'm sure something like this is easy to make and it was probably overpriced at Lunds & Byeryls. It was nice simply on slices of baguette, but I'm sure you could really dress it up with pesto, a nice vegan cheese, and maybe some vegan sliced meat.
