I used to enjoy eggs Benedict before going vegan, so I always love trying vegan versions I find places. This was the best vegan Benny I’ve ever tried, even the best Benny I’ve had in general. The tofu, spinach, English muffin, and sauce were all super delicious, especially the spinach.
