These are really fun pancakes. The ube imparts a deep sweetness that doesn't immediately hit your tongue. The texture is chewy like mochi which was really interesting. I used chia seeds for the egg and that added an extra layer of texture. I had to add much more water than the box suggested because the chia seeds absorbed so much. These are a fun novelty but I wouldn't say I like them more than traditional pancakes. I do really love the beautiful lavender color.
