It's so refreshing seeing creative vegan sushi! I love mushrooms and anything tempura, so the Shiitake To Me was an obvious choice. I love the earthiness of it balanced with the freshness of the Thai basil on top. The sweet soy sauce was delicious and the tempura mushrooms and sweet potato were so light and crispy.
