
My go-to comfort food: rajma (kidney beans prepared in a spiced tomato sauce), rice and homemade vegan yogurt! Delicious and nutritious!
Though the rest of the ingredients are prepared from scratch (including the beans), I end up using Kirkland's Signature Tomato Sauce from Costco! It adds a great balance of acidity, sweetness, and overall tomatoey-goodness 🍅 while cutting my cooking time considerably! A total win as far as I am concerned! 💯
