Salad at a ramen bar?! I know, but trust me, I’m in love with this salad. It’s so fresh and crisp, light and tangy. It’s got beans, and greens, and fiber galore. It’s a meal in itself, in my opinion, but when I’m feeling like I just can’t pass on the Flying Vegan Harvest, I can usually convince whoever I’m with to share this salad as a starter!
