This is really nice, though doesn’t quite hit the mark in terms of lamb is lamb is less firm when it is slow cooked and pulled. the texture is still good, the flavour is there and the sweetness is incorporated to replicate lambiness. Made ut into a TikTok foldy enchilada thingo. Good stuff!
