I got some fresh corn cobs the other day🌽. They’re so sweet and delicious eaten fresh. And I thought I’d use the rest to make a bean and corn salad, with half the corn kernels charred on a cast iron pan🔥 (I don’t have a grill—or a backyard for that matter—and this is my secret weapon😉)
Instead of the usual black beans, I tried this boxed #cannellini beans this time. They’re a bit mushy, but not too bad (probly better for bean dips/spreads though). It’s good that they’re salt-free since I always give canned/boxed beans a good rinse anyway🚿 And, I also always save the liquid, the magical aquafaba, to use later👩🏻‍🍳
I think I’ve confessed my preference for the box over the tin before. But I’ll say it again: I LOVE IT 📦❤️ Plus, the material is #FSC certified, i.e. from responsibly managed forests🌳 What’s not to love?
