This dish checked all the boxes of a meal that’s healthy, delicious and filling. Bonus points because you feel great after eating it! There are so many different textures and flavors - the pesto and the pistachios were definitely two shining stars. The quinoa is orange-scented and is a contrasting texture and flavor from the cold crunch of the fresh arugula.
