Harvest Warm Bowl

I quite enjoyed this for a convenient lunch. The #balsamic dressing was delicious and a nice compliment to the sweeter elements of #apple, #cranberry, and #sweetpotato. I favored it cold over warm. 🍎 #vegantraderjoes

This was a nice fall lunch option! This bowl has kale, sweet potato, green apples, dried cranberries, green onions, and a balsamic vinaigrette dressing. Topping it with pepitas or walnuts would take it to the next level. You can eat it warm or cold. I decided to heat it up and liked how the kale got a bit more limp. The sweet potatoes weren't quite as soft as I would have preferred and the dressing was just a bit too sweet. I’m not crazy about this one. I like the roasted vegetable bowl much better. I think I’ll stick with that one.

This is great for a quick lunch but you have to eat them pretty quickly but they expire not long after you get one.

This was perfectly adequate - the vegetables were fresh and it was filling. I’ve made a similar rice salad from scratch and it was better, but I wouldn’t rule this out for a quick lunch again. #traderjoes #healthy #kale
