Eggplant Garlic Spread with Sweet Peppers

To continue my post-election day comfort food, @jonok and I made some grilled cheese and paired it with Campbell's tomato soup. We just used up what cheese scrapes we had in the fridge: Daiya swiss slices, cheddar shreds, and Trader Joe's parmesan. I really enjoyed adding this spread to one of the slices of Stan's Artisan Breads sourdough. The eggplant flavor really comes through which I really appreciate. This chunky spread is so delicous and versatile. I've enjoyed it on crackers, added some to my pasta sauce and I've spread it in veggie wraps for extra flavour. It does have a mild sweetness to it, but it's not overwhelming and is still a tasty component in savoury meals. Picked this up in Pittsburgh earlier this summer. Trader Joe's is one of my favourite US grocery stores for unique fun products.

This has got to be one of my favorite products at Trader Joe's. Love it mixed in with wild rice, mixed veggies or bok choy, and some tempe. It also makes a really spread on some toasted sourdough bread. #veganin2021
