Curry Spring Rolls

Sometimes I’ll buy something #justbecauseitsvegan — and a good discount never hurts, either! These eggless egg rolls were an intriguing find in the Safeway clearance freezer, and they sounded very easy to prepare, so into the basket they went. Based on the description, I was imagining something like a samosa, but in roll form. These seemed to be filled with mostly #tofu and some diced vegetables, which were flavored with the lightest touch of coconutty #curry. Regrettably, the spices weren’t nearly as intense as I would have liked — this almost needs to be paired with a curry dipping sauce, a la roti paratha. The wrapper crisped up well in the toaster oven, especially at the ends, though the middle remained a bit doughy due to the moisture of the filling. With regards to packaging, I liked that the egg rolls were just sitting inside the paperboard box, without any plastic save for the sauce packet. These are good as a #frozen #lazyvegan starter: a breeze to heat and reasonably satisfying (yet simultaneously nice and light,) though they could use some work in the flavor department. The full price of $5+ feels a bit ludicrous, but I might get them again if reduced.

A spring-inspired, mini-daffodil backdrop for Spring Rolls seemed fitting. 😊 🌼 These curry spring rolls by Lucky Foods are a delicious addition to any Asian- inspired meal, especially when air-fried. The sauce that comes with them is ok, but I prefer using my Akadi sauce instead (see recent Akadi sauce review). These spring rolls are filled with cabbage, garbanzo beans, tofu, onion, green pea, and toasted unsweetened coconut among other ingredients. I recommend trying them if you haven’t already! p.s.
