Belgian endives

I LOVE #bitter greens, and while I wouldn’t say Belgian endive is my favorite #chicory (I think that prize goes to radicchio or frisée,) these endives from Trader Joe’s weren’t half-bad. #eatyourgreens They are grown in California. The heads were very #crunchy, and their bitterness was super tame and mild — it honestly kind of reminded me of romaine lettuce. They were a nice base for my lunchtime #salad. A set of 3 endives (2 white and 1 red — the red ones all looked a little thin) is $3.49 at Trader Joe’s, which is a touch spendy for the #produce section but not exorbitant. The endives come in the plastic bag with a paperboard tray inside to support them. #fresh #vegetables

cut these in half, brushed them with a homemade white grapefruit balsamic vinaigrette and grilled them. Really good! They were tender and grilled well.

I never knew about these till I found them at trader Joe's They're crunchy and tasty and good for salads or healthy snack
