I actually had this cocktail for the first time and wasn’t aware that the foam on top was egg white and was horrified when I found out. BUUUUUT the Gigi Rooftop offer a vegan version with cellulose instead of egg white and there’s no difference in the taste! Their cocktail menu offer a lot of vegan friendly ones and are clearly marked so, which is super helpful!
