Vegan eggplant parmigiana

This is the second time I’ve had this dish but it tasted significantly different this time and not in a good way. I didn’t finish it. It did have salad but that came separately. Not sure why they changed it because it was so good before!

This was amazing! Such a huge serving, I could not finish it all. The cheese made me think it was dairy when it first arrived but it was impressively vegan 😍 the chips were so yummy and cooked so well too.
