Sweetcorn and courgette vegan Pancake

This was an amazingly tasty dish and was a part of their pancake specials. Cafe Thrive had a promotion of pancakes for pancake week and this was the savoury one. As well as being vegan, it was also gluten free. It was served with a sweet chilli sauce and was very tasty. I hope they serve it again.
