Sweet Chili Seitan Sandwich w/ Lentil, Mushroom and Kale soup

This was my first time having seitan (I know; what kind of a vegan am I?!?) so I'm not sure what it normally tastes like. It was more moist than I expected it to be. The sandwich was good.

This was amazing! Seitan, avocado, greens, cucumber, sweet chili sauce and the tastiest almond based spread! The soup was a daily one, but there is a regular vegan option.
