Spinach & Mixed Beans in Coconut Milk

Last weekend we had a Vegan fest here in Malta, which went on for 2 days. It's still small, but it's already the second year and it's still growing. It's definitely a really nice opportunity to meet other like minded people and be in a relaxed atmosphere. Hope it's even bigger next year ✌️ Found this really cool Caribbean place on the vegan fest. They were serving from a food truck. I think usually they would have their own restaurant. Either way, the food was incredibly flavourful and the staff was super friendly.
