Having a delicious vegan restaurant right inside the Seattle/Tacoma International Airport (SeaTac) is the greatest thing ever. Sure, all airport food is overpriced, but this is actually a GOOD restaurant, with great vegan food. Worth sitting down here in between flights.
I ordered the Roasted Vegetable Quesadilla. Oh my God it was hella good. It was loaded with roasted veggies, the "cheese" was melted and warm. The "sour cream" dipping sauce was a perfect compliment too. I wasn't a fan of the chopped carrot/ginger garnish on top, so I just took that off. But every other aspect of this was 100% amazing.
And the whole time while I was eating this I kept thinking, "this is so unhealthy... But SOOO DAMN GUUUD!" (Only because it was a bit oily, but while navigating through the airport, I couldn't care less. I enjoyed this.)
Ingredients included: roasted vegetables and a trio of cheeses, served with sour cream and roasted tomato salsa.
