Roasted Sweet Potato Tacos

Crujientes tortillas de maíz rellenas de boniato asado, pimientos, cebolla y aliño mejicano. Servido con guacamole.

Really enjoyed this dish. Not sure if they intended this or not, but I added some of the black beans and guacamole that were served on the side to the tacos and the flavors blended perfectly. Yum!

The tacos are filled with roast sweet potato, fried peppers and onion and are served with guacamole and a black bean dip. Cholula hot sauce if you want it; I checked the label, it's vegan 🌶️ The tacos themselves were good but the guac not so much. #scotland
