This dish wash a very pleasant surprise! I'm newly vegan and have mostly been eating grains, beans, fruits and veggies. Haven't experimented much with meat alternatives or anything other than plants as they grow out of the ground. I didn't know what the expect when I ordered the Rainbow, but I'm glad I did, as it was a new vegan experience and something I couldn't make at home (yet)! It has great texture and flavor. Flakey, like fish. Hence the name ;) And a heap of delicious veggies on top. More than enough food for one, or two...depending on your appetite.
