Hearty Stew with Winter Vegetables

LOVE this dish! I can already foresee that I will crave it during colder weather. Make sure to order sourdough bread with it. Delicious!!

Hungarian goulash filled with mushrooms (in lieu of beef) and root vegetables, served with confit garlic oil mashed potato. Nice albeit predominantly starchy / carbs and soft in texture.
