Flan patate douce noix de coco

Had this pretty looking piece of cake in Rennes. The coconut and purple sweet potato combo works really well in my opinion! The texture is rather moist and chewy, which I enjoyed, but bringing a bit of contrast with something crunchy (chunks of pecan nuts?) might take this to another level 😋 Slightly too sweet for my liking, but an interesting and original cake that’s for sure 🥥🍠
