This dish is fully customisable; you can choose your noodles, broth and three ingredients. So it’s quite simple to make a vegan version.
I chose ramen for the noodles, which were perfectly firm and chewy. I got kimchi broth which was a delicious mixture of savoury, spicy and sour. It also came with actual kimchi in it which made me question my choice to get Chinese cabbage. I also got the dried mushrooms, which were very flavourful. The best ingredient that I got was the fried bean curd though, the crispy texture worked so well with the tasty kimchi broth.
I absolutely love this dish: you can customise it however you want, its really simple to order, it’s clear what is vegan and what isn’t, and it’s a huge bowl of soup and noodles for only $10.80.
