Caramelised Fennel Salad With Black Garlic Dressing & Smoked Potato Skins

Not my favourite dish in the set menu but still creative and delicious. When compared to other dishes on the set menu this probably fell a little flat, but when compared to offerings from other restaurants this is strong contender to drive new ways of thinking about vegan menus.
