Breakfast Sandwich

This sandwich looks a bit different than past breakfast sandwiches reviewed here. The swapped the grilled tofu for a very eggy tofu scramble. This is probably the eggiesr tofu scramble I've ever had! It was quite the mess to eat, but @jonok and I managed. The tempeh was amazing as always and the veggies tasted fresh. The cheese sauce wasn't as flavorful as I was hoping, but I like the idea. This is classic vegan breakfast comfort food. A toasted English muffin with grilled tofu, lettuce, tomato, cashew cheese sauce, and maple-tamari tempeh bacon served with a side of roasted sweet potatoes. I appreciate that it’s not a ridiculously large serving; it’s the perfect amount to fill you up. #veganisnotscary

The tofu was kind of bland but the cheeze sauce was great and the sweet potatoes were a nice side.

My friend had this and ate it quickly so it must have been good!!
