Red braised Lion’s mane, purple sapphire potato au Shu — Avis de Madeleine (27 sept. 2025)

😱 Holy mother of god. When I put a piece of the braised lion’s mane mushroom in my mouth I wanted to cry happy tears. I was moved to a different realm. It was like having a spiritual awakening that’s how jaw-droppingly delicious this was. I could die then and there happily. This dish comes as the 8th plate in the 10-course degustation set, with a beautiful borage flower, crunchy puffed as well as fresh corn kernels, and chilli oil. The Chinese 5-spice scent wafting off this was mouth watering.
The two pieces of sapphire potato looked very similar to the two pieces of mushroom but had a burnt crispy skin. A life-changing dish!
