This dish always hits the spot! The curry is incredibly tasty, and the potatoes, carrots, and beans are consistently cooked to perfection. If I had one suggestion, it would be to add some form of plant-based protein to make the meal feel more complete. That said, I still absolutely love this dish - it's hearty, comforting, and delicious.
