This tofu belly bao was incredible. They used softer and more squishy tofu to mimic the texture of pork belly and coated it in this sweet and smoky sauce that was so yummy. The gai choy relish was tart and salty and super delicious. And the cilantro and crushed soy nut were great accompaniments. The bun itself was super fluffy and pillowy. Perfection!
