Cierra and Matt, a former Marine with a successful private equity career, had a comfortable life for their young family. I love the “Mas Veggies” menu here! And I love making a meal out of a huge plate of nachos. 😋 This delicious dish features Tex-Mex crumbles, Cholula crema, beans, guacamole, and a variety of fresh veggies. Veggie Grill’s elegant downtown location had only a few dine-in patrons on a Sunday night. But the staff was working hard to fulfill a lot of to-go and delivery orders. I’m glad to see the restaurant doing well. #pdxvegan #mexican
