When not busy passing off as a #vegansteak or being the greatest component of South Indian cuisine, #cauliflower leads a double life of being the best grilled thing ever. If you have an air-fryer at home, stuff one in for 30 minutes with a coating of spices. You’ll thank you 😙 I’ll thank my intuition for getting this too. The #gremolata was a nice earthy zest that contrasted beautifully with the red pepper purée on which the cauliflower sat on. You can see how it dyed the heads green.
