Review of Ube Mochi Pancake & Waffle Mix - Trader Joe's by kyu

I #yam so glad I was finally able to try this seasonal, ube-flavored mix! It sold out almost immediately last summer, so I made sure to grab a box as soon as they hit store shelves this year. Reading through past reviews, it seems like almost any egg replacement will do the trick; I prepped my batter using a powdered egg substitute (similar to the one from Bob’s Red Mill) and vegetable oil. The resulting mixture was pretty thick, and I ended up increasing the water so it’d be more pourable. As you can see, it’s also gorgeously purple (colored with vegetable juices.)

I’m definitely biased since I’ve never really liked #pancakes, but I think this mix is best in waffle form: if timed correctly, the center will still retain its elastic, mochi-mochi glutinous rice chew while the outside crisps up beautifully. Sadly, the hue becomes a bit muted with cooking. #waffles resolve the issues of sogginess and stodginess that can arise with pancakes, and they’re a sturdier base on which to stack your toppings, too. I went with fruit, which is simple but never out of style.

Syrup is not necessary, as the mix is already infused with a mild but noticeable sweetness. If you grew up with ube, you may be disappointed with the depth of flavor, which is pleasant enough (sort of vanilla/coconut) but not especially identifiable as the root vegetable.

Overall, this is a fun, desserty, and extremely photogenic treat for special occasions, like weekend brunch. At $3.99, it’s also pretty affordable — but supplies are limited, so best not to dawdle!
