To make it vegan, just ask for no cheese or sour cream. I ask for extra guacamole! You can opt for either flour tortillas, corn tortillas, or lettuce wraps. There is a great variety of veggies in the dish and a very slightly spicy seasoning, but very mild. The chips and salsa are great too, especially the salsa verdi.
