I missed my sweet potato pie moment
this fall (though really one should eat sweet potato pie whenever they want) so I decided to experiment with some sweet potato squares - essentially the pie without the crust - and they came out so well! These purple sweet potatoes were also delicious on their own. Sweet, filling and warming. The bars aren’t that vibrant as they have brown sugar in them, but the potato was so absolutely gorgeous after it was roasted. Love a food that’s both delicious and pretty 💜
