This "fake" donut sure looked like the real thing, but was actually an iced dessert!! It had a base of cactus fruit jam, a ring of cactus fruit ice cream, and coating of dark chocolate. Yum, yum and yum 😋. Chef Alexis always uses seasonal produce from the garden, and the cactii surrounding the restaurant were billowing with fruit.

sanleeping Wow. I've never seen such imaginative deserts
Is iit the Chumba fruit he used?
The Chumbo cactus plants here are suffering, they're covered in cochineal beatles. 😢1 likeReply
danielgl Chef Alexis has an infinite source of creativity, and never stops surprising! Oh my goodness, it is the fruit you say, as I just found out googling it. I never knew it was the Prickly Pear in english 😅. Here they call it Tuno Indio. 🌵💕Reply
sanleeping Yes it's the one from jungle book. My older nieghbours eat it ice cold and remember, the chumbas were the sweet treat of their childhoods. They pick them with a tin can attached to a stick. Quite a labour of love.
Chef Alexis has brought the chumbas back into the limelight. 💚Reply
