Tamari or tamari shoyu is a Japanese sauce made from fermenting soybeans (or sometimes wheat) in brine and a fungus called koji. Tamari is usually produced as a byproduct of miso paste. Thicker than Chinese soy sauce and less sweet (due to less/no wheat) and with a rich / umami flavour, most tamari is vegan and gluten-free.
