
Ok so granted maybe this is not the best presentation or photo but we make this form of eggplant parmigiana in our house all the time! I use these already pre-breaded eggplant cutlets from Dominex in the oven covered with some tomato sauce (last night I used Newman's Organic Marinara) and either Violife or Daiya mozzarella cheese (and sometimes some sliced onion.) Served with a side of pasta it's really good!

Ooooh I should try these! I really enjoy eggplant but it’s the one veggie (well, fruit) that I never am fully pleased with when I prepare myself. Pre-breaded sounds great!
