Maybe I'm too traditional on my concept of "lasagna" but this surely wasn't what I was expecting when I read eggplant lasagna. I mean, where's the pasta?? If it was called eggplant parmigiana I would said it was great. The eggplant was tasty, the vegan cheese was well done, the pomodoro sauce wasn't acidic, the whole rice wasn't dry like in most places and the potato chips were nice (even though I didn't know where to use it). I could eat it again now that I know what to expect #veganisnotscary #curitiba
