

Puteri Salat Gula Melaka
If you have a sweet tooth, malay and nonya kuehs (steamed cake) are great vegetarian alternatives for desserts.
This local flavourite goes by many names: kueh salat as it’s popularly known in Singapore and Malaysia or putri salat in Indonesia. It’s a dual layer steamed cake with a base made of glutinous rice flavoured with rich coconut milk and a custard top
The glutinous rice base here has been changed to a custard base with coconut milk and sugar. It is actually quite nice as it is less filling than rice.
The custard top here is made from gula melaka and coconut milk. Gula melaka is sugar made from coconut stored in bamboo shoots. That is why it comes in cylinderical chunks.
This kueh is a nice sweet finish to the nasi padang meal. It is sweet but not over-powering. The bottom coconut custard has a fragrant coconut taste.
The top custard is lacking the oomph of a goid gula melaka kick. A good gula melaka should have a smoky and fragrant flavour. Perhaps this kueh can use a better gula melaka or more of it in the custard.
The texture should be soft and pillowy but this is rather hard at the top. So that is not perfect.
As a kueh lover, this is not meeting my high standards.
