It's a very interesting idea but I didn't like the execution. The vegetable filling is raw, and I think it would work better if it were cooked or a different combination of vegetables.

Probably the best vegetable roll I've ever had! Not sure about the combination in this roll, but it at least has carrot, avocado and asparagus. It also seemed like there was a marinade or sauce in the roll as well.

Largely diced tomato with thinly sliced red onion, a small amount of quinoa and topped with cilantro in a tangy marinade. The dish was good, but I don't think it truly resembled ceviche as I'd expect it to be diced smaller. The flavor combination was impeccable though.

The house-made gelato was creamy and a delicious combination of sweet, tart and creamy. The gelatos are supposed to be their only vegan dessert.
